I find something about this one VERY unappetizing. I think there are a lot of aesthetic reasons that you don't see sushi presented this way. It looks a little like a cotton gauze pad with a drop of blood on it. With food and cuisine, you can't completely throw away the idea of temptation and attraction just to show off what you think is a clever idea.
