If the other two are shark and Aligator then why a horse? why not rhinoceros which is way tougher.

I don't think they are talking about toughness. I think they are using animals that have adapted thru hundreds of millions of years like the crocodilia or the megalodon. But either way I don't see why the horse is part of this. But maybe I'm overthinking this. So, forget it Cheers! Keep the good work!

I don't think a Rhinoceros will create a better association than a Horse.
Horse is more popular, it creates a "now"-feeling, unlike "ancient"-feeling of Rhinoceros. And I think horse makes the message more relevant. I mean it's not only tough, it represents the persistence and loyal also.
Great artwork and concept, by the way.
