I'm thinking it's because of the conveyer belt aspect. But then the question begs to be asked, where are these people eating that sushi restaurants have conveyer belts?! The ones I go to just have waiters.

ok, the car goes on and on in the conveyer belt (never seen one either but hey, it exists), so it never stops and everything... now it begins to make sense, hummmm.
the title DEFINITELY should not be "sushi", at the first place.
i humbly suggest you make a little video showing the car in movement, because it can be confusing.
not a bad idea, not a bad idea at all, but the way you're showing it leads to a "huh?"
yes it never stops, it's also very slow.
